
I’d forgotten how nice these are. I haven’t made them for years but a bout of intense boredom this afternoon brought on a culinary frenzy. The alternative option was cleaning the bathroom, so I had no choice really.
This is my Aunty Mary’s recipe. Her biscuits live on in sunny Tooting.
Aunty Mary’s ginger biscuits
Makes 8-10
60g / 2oz butter
60g / 2oz golden syrup
30g / 1oz sugar
120g / 4oz self raising flour
half tsp bicarbonate of soda
1 tsp ground ginger
Preheat oven to 180°C / 350°F / Gas 4. Melt butter, sugar and golden syrup together in a pan. Sift flour, bicarbonate of soda and ginger into a bowl. Mix butter and syrup mixture into the flour until it forms a slightly sticky dough. Roll into balls and press down with a fork onto a lined baking tray.
Bake for 10 minutes, cool and scoff.

They are actually my great aunty mary’s buscuits so that makes her your great great aunty mary and she last made them for me when she was 103!!
