Well, if I can’t have the real thing in the garden…
100g / 4oz unsalted butter
100g / 4oz caster sugar
1/2 tsp vanilla extract
200g / 8oz plain flour
half tsp baking powder
half tsp fine salt
Cream butter and sugar, then beat in the egg and vanilla. Sift the flour, baking powder and salt together and then add to the mix. Form into a ball, cover in clingfilm and leave in the fridge for an hour.
Preheat oven to 180°C / 350°F / Gas 4. Roll out dough, cut into piggies, and bake for 10 minutes.
To make the icing, put a couple of tablespoons of boiled water into a bowl, and sift icing sugar over the top. Mix together and add water as required to make into a smooth paste. Add pink colouring and spread onto the cookies when they’re cool.
